Visitors coming to Yen Tu will not forget to visit the Nuong Village of Truc Lam Yen Tu Cultural Center, which recreates the village with architectural features of the Tran dynasty more than 700 years ago. Coming to Nuong Village, we were introduced to us by Mr. Nguyen Van Toan, Chef of the culinary department of Lang Nuong - Yen Tu, a number of traditional Dao dishes, including chicken with buffalo wine.

According to Toan, Yen Tu has now become a famous tourist destination in the country, but in the past, this place was a sacred area, the climate was very cold in winter, and far from crowded urban areas. Therefore, the Dao people living at the foot of Yen Tu mountain in the past have to take care of their own health. In addition to the traditional remedies from the leaves of the forest, they also have to have dishes like remedies, to help increase their resistance to the cold.

According to Toan, in order to have the right soup quality, first of all, there must be buffalo wine - a typical wine of the Dao. Wine rice is upland sticky rice that is pounded with a stone mortar, cooked with yeast from the leaves to create a characteristic sweet taste of buffalo wine, different from other ordinary wine.

The chicken used to cook the soup must be the chicken that indigenous people raise in the large hills, the chicken can be freely mobilized, the meat will be strong, delicious, if it is the climbing chicken, the better. When cooking, it is up to the number of people who eat to choose the chicken and add the appropriate amount of alcohol. If you cook for a 4-person tray, choose a 1kg chicken, cook with about half a liter of Bauer wine.

The chicken is cleaned, the neck, wings, and legs are boiled to get broth to cook soup, and the main part of the chicken is cut into small pieces to taste, marinated with minced ginger, seasoning seeds and about 200ml of buffalo wine in time about 10 minutes.
